The Recipe Corner - Evil Genius Mac and Cheese




1/2 lb uncooked macaroni or chunky pasta, give or take
1/2  onion, chopped
1/2 head of garlic, peeled and chopped
oil for sauteing
4 oz of really awesome cheese, grated
generous pinches of the herb/seasoning of your choice. I like curry powder myself
salt and pepper to taste
milk and yogurt to equal approximately 2 cups, give or take

topping:
1/3 heaping cup breadcrumbs
grated parmesan

Heat oven to 375F and grease an 8 or 9-inch baking dish.

Saute onions until soft, then add garlic and saute for a few more minutes. In a mixing bowl, mix pasta, really awesome cheese, and enough milk and yogurt to just cover the pasta when stirred in (you want to be able to tell it's still in there). Add other ingredients, including onions and garlic, and pour into baking dish. Top with breadcrumbs and parmesan.

Bake for 45-55 min, or until it's browned on top and not bubbling anymore.



Servers 4 to 6.

The Recipe Corner - Crab and Shrimp Dip




8 ounces chive and onion cream cheese, softened 
1 teaspoon hot pepper sauce 
1 teaspoon Worcestershire sauce 
2 tablespoons chopped fresh dill 
2 tablespoons white wine 
1 cup cooked chopped imitation crabmeat 
1 cup cooked chopped shrimp 
1/4 cup shredded Parmesan 
1 loaf sourdough round bread or baguette, cut into 16 slices 
Olive oil 

Preheat oven to 400 degrees F.
Combine the first 5 ingredients in a large bowl. Mix on medium speed using a hand mixer until blended. Fold in the crab and shrimp. Transfer to a shallow 2-cup baking dish. Top with Parmesan. Bake for 20 minutes or until top is lightly brown.
To make the toasted bread slices, place bread slices on a baking sheet. Brush with olive oil on both sides. Bake in oven for 8 minutes while dip is also baking. Serve crab and shrimp dip with toasted bread slices.

The Recipe Corner - Dad's Special


1 pound ground beef
1/4 pound bacon
1 medium onion chopped finely
salt and pepper to taste
flour
milk or water

Cook the bacon until it will crumble but isn't burned. Remove the bacon from pan, drain, cool  and crumble.

Drain off a good portion of the bacon fat and then brown the ground beef in the remaining fat along with the onions. Season with salt (lightly) and pepper. (Use your own health as a guide on the fat and salt..)

With the heat on medium low, add back the bacon crumbles and then add milk (or water) to fill skillet about 3/4 full. (I use a standard 10 inch cast iron skillet for this.) Add SMALL amounts of flour at a time and stir, stir, stir until gravy starts to thicken. If it gets too thick, add more liquid. You must keep sitrring because it will burn fairly easily or get lumpy.

It's done when the gravy no longer tastes like raw flour.

Serve over toasted bread; other suggestions are rice or egg noodles.
Serves 4.

The Recipe Corner - Tanzanian Shrimp Curry



Serves 3 to 4 people.

Sauce:
1 can of unsweetened coconut milk
slightly carmelized chopped onions
cream, half and half, or condensed milk
curry powder, to taste
2 tablespoons of flour, stirred first in a little water so it won't  clump.

1 pound of large fresh Prawns, peeled and deveined

Carmelize the chopped onions; slowly add the coconut milk and the cream. Season with salt and curry powder to taste. Stir in the flour mixture over low heat until the sauce is thickened but pourable .

At the very last, before serving, stir in the prawns. Use low heat and cook until they are just pink; cut one to make sure it is opaque inside.

Pour over cooked rice.

CONDIMENTS TO SPRINKLE ON TOP:
mango chutney
chopped cashews
chopped green onion
shredded coconut
pineapple bits
mandarin oranges
browned sesame seeds

CabArray lives on Long Island about 3 miles from New York City. She fell into making jewelry by accident when she took a class to learn how to make cabochons.  After a few weeks of watching her work, the teacher asked, "What are you going to do with all those stones?" So she learned how to work with metal. She also does wire wrapping and beading.
